With the soft, mellow flavor and refreshing aftertaste of light & delicious junmai pure rice-brewed sake, Fukumitsuya brought about a revolution in the world of Japanese sake.

Founded in 1625, Fukumitsuya is Kanazawa’s oldest sake brewery. In 2001, the brewery was producing over 10,000 koku (about 1.8 million liters) of sake.
It was then that Fukumitsuya declared itself to be Japan’s first pure rice sake brewery and converted to exclusively rice-and-water brewing. Costs rose,
and brewing became more difficult. From an industry standpoint, the move made no sense, but the brewery has cast its lot with true junmai sake,
confident that an age was coming when products that are safe and secure as well as delicious will be in high demand. Rice from producers Fukumitsuya knows by sight and
has dealt with for over 50 years; hundred-year water from gushing springs dating from the early seventeenth century; and brewers capable of creating safe,
high-quality products: these are the three pillars of Fukumitsuya’s brewing process.

Fukumitsuya has another activity―research & development. Fukumitsuya develops a wide variety of products beyond sake,
such as rice-derived amino acid cosmetics and the probiotic beverage ANP71, made from rice and rice malt. Based on the idea that “through fermentation,
rice can not only create sake but enrich our customers’ lifestyles,” Fukumitsuya is exploring the many mysteries of rice fermentation and their hidden power,
reexamining its possibilities as a rice fermentation company.

Our rivals are not breweries: In search of a new ideal for Japanese sake.

Over the last 50 years, the environment for sake has dramatically changed.
With the rise of wine, beer, and shochu highballs, the diversification of consumer alternatives,
and the increase in those who don’t drink alcohol following lifestyle changes, our competitors are no longer other breweries.

In order to revitalize the industry as a whole, Fukumitsuya is working to unite breweries within the prefecture to tackle the challenges we face together.
The Sake Marche event, celebrating sake from the Ishikawa prefecture and fine foods,
is a collaboration with French & Italian gourmets to communicate the appeal of Japanese sake to wine enthusiasts.
The festival aims is to open doors and give festivalgoers a chance to gain a deeper understanding of Japanese sake, whose identity remains consistent.

That is due to Fukumitsuya’s corporate climate and its creed: “The earth does not change; the wind does; use both of them”.
This means that one has to adapt to the times to survive. Who endures, builds history and tradition.
Great changes are coming to the world of Japanese sake, food, cosmetics and the company Fukumitsuya itself. What will happen next? We mustn’t take our eyes off the road ahead.
